Del Frisco’s Grille in the heart of Stamford is first and foremost a steak house, and Chris Graziose and his team are experts at steaks. Chris is the new Executive Chef in the Stamford Grille location. He started working in a restaurant bussing tables, at 17 and fell in love with the business. He enjoys working at Del Frisco’s Grille, where all of the menu items are made from scratch, in house daily.

Del Frisco’s features a Bone In Filet Mignon, NY Strip, Ribeye, and Bone In Prime Rib on Friday and Saturday nights. All are prime grade of beef procured from Stockyards. Stockyards is one of the finest farms in Texas. On a busy night, the restaurant can prepare and cook over 100 steaks at once, in a 1200-degree broiler. All steaks are perfectly seasoned with salt and pepper and broiled to the diner’s preference.

Chris took us into the kitchen to see the broiler and explained the cooking process. The placement of the steaks enables the cooks to keep track of the degree of doneness the guest has requested. While we watched, he cooked a 16 oz. Ribeye, medium rare, 3 minutes on each side in the front section of one of the broilers and then a minute in the finishing oven. It was cooked to perfection, seared on the outside, very pink and tender on the inside. We agreed it was the best steak we had ever tasted!

Besides steak, Del Frisco’s Grille features an extensive menu: fish entrees include Pan Seared Scallops, Seared Salmon in Dijon vinaigrette, Sushi-grade Tuna and Filet of Sole. The Steakhouse burger is a blend of prime ground filet served with fries. Their salads include a very popular Kale and Brussels sprout mix, a Caesara Caesar and a traditional Steakhouse wedge.

Chris’ motto is “say yes to anything.” Special ingredients and dishes are happily prepared for customers who are allergic to anything. He described himself as a guy who loves to be busy and who welcomes a challenge. Since many of Del Frisco’s diners are having dinner before a movie or play, Chris and his staff know how to serve a complete meal with a minimum of wait time.

Del Frisco’s Grille has rolled out with a new and elevated menu including new wines by the glass.

Del Frisco’s Grille also serves brunch on Sunday’s from 11-3.
