What’s good at Boxcar? Everything, but here are a few of our favorites…
On the lighter side, the Mexican salad is delicious. Boxcar combines organic hearts of romaine, roasted corn, tomatoes, avocado, cucumbers, cilantro and organic grilled chicken in a cilantro/lime dressing.
We recently tried the terrific fish tacos – marinated wild red snapper with avocado/tomatillo sauce and crispy cabbage/beet slaw, served in a soft corn tortilla, accompanied by Jasmine rice and black beans. As an added benefit, the corn tortillas are gluten-free.
If you are hungrier, Boxcar puts its own stamp on the traditional cheeseburger. Pasture-raised grilled beef with Jack cheddar and hot New Mexican green chiles, served in a flour tortilla, accompanied by organic hand-cut fries.
Dinner for 2? We love the shrimp fajitas, served sizzling in the pan, with roasted red and yellow peppers, onions and cilantro. It comes with Spanish brown rice, pinto and black beans, guacamole and flour tortillas. Get it spicy!
Boxcar uses local and/or organic ingredients and serves only sustainably raised organic meats. Their service is friendly and efficient, and they welcome families with children. The dining room is bustling; the bar boasts a real wood-burning fire. And if you’re in the mood for a margarita or three, you’ve definitely come to the right place.
